3 Quick and Healthy Weeknight Dinners

If the thought of spending your Sunday roasting, chopping (like every single ‘healthy eating’ recipe seems to involve) for meal prep does not bring you joy, we might have the perfect solution that means you could be spending your quality Sunday time binging on your favourite series like Dirty John on Netflix instead.

We know that eating well in the week when you have little time, even less inspiration and no energy is hard so each week we thought we would share a speedy, easy, cheap recipe that you can whip up quickly with some built in time to chill out time whilst it is cooking. They don’t require any advance planning or a load of random leftovers that don’t go with anything else in the fridge.

You will need to invest in a few store cupboard essentials but you can pick these up at great prices from Aldi, Lidl or any of the other discounters. These are our suggestions..

Extra Virgin Olive Oil

Chilli Infused Olive Oil

Balsamic Vinegar

Tomato Puree

Garlic Puree

Salt 

Black Pepper

Mixed Herbs

Mixed Spice

Curry Powder

Beef, Chicken, Vegetable Stock

Dried Pasta

Basmati Rice

Tinned Tomatoes

Jars of Peppers



Mediterranean Medley

Prep Time - 5 mins

Cooking Time 30mins

Ingredients for 4

12 small potatoes (if you don’t have small any size or type will do)

1 onion

8 cherry tomatoes

2 courgettes

4 chicken breast - for vegetarians use Halloumi

1 tablespoon of Balsamic Vinegar

1 teaspoon of mixed herbs



METHOD

Turn oven on to 200 degrees C

Chop unpeeled potatoes in to approx 3cm squares

Peel and slice onions

Place potatoes and onion on to oven tray, toss in 1 tablespoon of Olive Oil (use Chilli infused if you prefer), season with salt and pepper, place on top shelf in pre-heated oven for 30 mins.

Cut tomatoes in half, slice courgettes, place on separate oven tray, sprinkle with mixed herbs, season and place on middle shelf in oven for 25mins.

Chill out for 15mins

With 10mins of cooking time remaining, mix 1 tablespoon of oil with 1 dessert spoon of tomato puree into a paste, slice chicken into pieces and mix in the tomato paste. Stir fry chicken until cooked through.

Once veg cooked remove from oven, tip courgettes and tomatoes into potatoes and onions, add 1 tablespoon of Balsamic Vinegar and toss thoroughly. Divide on to serving plates and top with chicken pieces (or Halloumi)  - Done!!   


Chicken & Chorizo with Rice

Prep Time - 5 mins

Cooking Time - 40 mins

Ingredients for 4

1 tablespoon of Oil

300g of chorizo, cubed

1kg of chicken thighs, skin on ( you can use chicken breast if you prefer)

Salt & pepper 

2 small onions

200ml of white wine

1 litre of chicken stock


METHOD

Put oil in large saucepan or casserole pot add chorizo, stir fry for 3-4 mins, add chicken, season with salt and pepper, cook for further 4-5mins. Add onions, garlic and cook for 3-4mins. Add rice and wine - bring to a simmer for 3-4mins. Pour in stock, bring to boil then reduce heat, cover loosely and cook for 15-20mins or until rice is tender and has absorbed the liquid. Serve.



Pasta with Spinach 

Prep time - 2 mins

Cooking time - 12-15mins

Ingredients for 4

350g of dried pasta

100g of pine nuts

400g of baby spinach

100g of grated cheese - (use any variety you have available)


METHOD

Fill large saucepan with water, add teaspoon of salt and bring to the boil, add pasta and cook as per packet instructions. Drain pasta, reserving 50ml of cooking liquid in pan, return pasta to pan and over medium heat add spinach and stir for 1-2mins until leaves wilted. Toss in pine nuts and grated or crumbled cheese. Tip in to serving bowls and black pepper and serve.
